Well, I just transferred two videofiles (taken july 10 and August 26) from my ipad to iphone and they end up being as taken today, again. And no, they were not manipulated, those are straight untouched files.
If i look up in info as you earlier suggested, iit shows that these transferred files are as of september 24, new files. Original files on ipad have correct info and are sorted in collection section as per their date accordingly, So, system alters these files somehow after transfer.

i just replicated this issue easily.
Please try it with with videofiles ( .MOV extension) and .PNG files (screen capture with home and lock button pressed).
I'm still testing but it appears as if normal image files ( .JPG extension) seems to be fine, even though it gets renamed too, but doesn't change correct time order.

After doing some experimenting I think i know what happened.
When you transfer picture with name that already exists, is already used on destination device ( say IMG_0023), system renames it and file turns to current date. When i transfer picture with unused name everything seems fine.
It would be nice if there was some workaround on this.
I think there should be warning on this to avoid confusion (when you transfer from idevice to Idevice chances are high).

I'm tranferring from my iPad mini to my iPhone 5, both with IOS 7 installed yesterday.
I was talking about 'Photos' tab, pictures that i transferred when i had IOS 6 have been correctly sorted by date, pictures that i transferred today, AFTER installing IOS 7, are sorted as if they were taken today (they were originally taken in July and August.
Try it yourself, transfer any old picture and it will end up in 'today' section. Unbelievable.

Just tried something different, transfer from iPhone to iPad, my iPad is much newer, much less files taken, i thought it might make a difference (may be files will not be renamed).
Absolutely NO DIFFERENCE. Video file from march 7 is "new" on my iPad after transfer.
