Found the problem... In the IPod you need to go to "Settings>Privacy>Photos" then select Photo Transfer and turn ON (slide button) the access to the folders containing photos. Note that "authorizing" the device to access the photo albums does not mean that it automatically grants access to said folders; you have to MANUALLY do so in your device following the path indicated above.
